Ember Bay is fraught with danger and keeps you on your toes, and it stays fast-paced with lots of ways to keep you moving throughout the map. That kind of rapid movement and frequent action calls for food that you can eat on the go. Pepper poppers are perfect for that, giving you something to snack on while you glide the ley lines over a horde of murderous destroyers.
1/2 block cream cheese (4oz) softened
1 cup shredded cheddar cheese
1/2 cup shredded pepper jack cheese
1/3 cup shredded gouda cheese
1/4 cup diced tomatoes
1/4 cup diced onion
1/4 cups diced green chili peppers (one is enough but I grabbed about 4 to also make larger stuffed peppers)
about 12 little sweet peppers
1/2 cup crumbled sausage
1/2 teaspoon garlic powder seasoning
1/4 teaspoon chili powder seasoning
two dashes of chipotle seasoning
Preheat oven to 400 degrees. Place the sausage in a pan on medium to low heat. While the sausage is cooking, wash and cut the little peppers in half in a way that allows the halves to sit flattish. Dice the green pepper, onion, and tomato.
Place the cream cheese, shredded cheeses, sausage, and the diced veggies into a medium mixing bowl. Mix thoroughly, add the spices and mix thoroughly again. If you don't want this too spicy, only add a little bit of the chili powder and chipotle at a time until you reach the desired taste.
Scoop the mixture into the little peppers. The mixture can overflow a little as it will melt down into the pepper as it cooks. Sprinkle a little more cheddar on top and place in the oven and cook for 15 minutes.
These pepper poppers came out quite well! They weren't spicy enough to make you spit fire like this wurm, but they were very tasty. We cut our recipe in half since we ended up with quite a lot of the filling, and we used some of it to stuff some of the green chili peppers too. This version should make about three cups.
